I have to confess, I had my first fried green tomato only a few months ago but I was totally hooked! I don’t know where they had been all my life. I wanted to come home and try to make them immediately but I wanted to come up with a gluten free version, and here it is! You cannot tell these are gluten free, they are perfectly golden and delicious. I fried them In a skillet until golden brown and finish cooking in the oven. So easy and effortless. The Chipotle sauce is warm and smokey, perfect pair for these yummy tomatoes.

Fried Green Tomatoes (Gluten Free)

3 Green tomatoes
1 cup almond flour
1/4 cup freshly grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon Old bay seasoning
1 teaspoon deli mustard
–For the chipotle dressing–
1/3 cup mayonnaise
1/2 teaspoon old bay seasoning
1/8 teaspoon garlic powder
1 teaspoon chipotle paste
salt and pepper to taste
Preheat oven to 375 Degrees and line a baking sheet with aluminum foil.
Slice the tomatoes into a 1/4′ rounds and set aside.
on a shallow plate mix the almond flour, parmesan cheese, salt and old bay seasoning, and set aside.
In a bowl whisk the egg and the teaspoon of deli mustard and set aside.
Heat a heavy-bottomed skillet on medium-high heat and add enough oil to cover the bottom completely.
Dip the tomatoes in the egg mixture and dredge in the almond flour and parmesan cheese mixture.
Sear the tomatoes in the skillet, only about 2 minutes per side, just to give them a nice color.
Transfer the tomatoes to the baking sheet and bake for 10 minutes. Flip them over and continue baking for another 10 minutes.
For the chipotle sauce, add all the ingredient in a measuring cup and whisk until well combined.
After the tomatoes are done, let them rest for a couple of minutes before serving.
