Here I was, tired, overwhelmed and so hungry after running with my kids all morning, I wanted something tasty but also fast. Something that I could just mix and cook in less than 10 minutes… Tuna cakes to the rescue!
I’ve made this recipe a bunch of times. I’ve made it with canned salmon and also with canned tuna, both are equally delicious! I serve them with a side of greens, it’s the perfect lunch! light and healthy but also filling.
This is one of my go-to gluten-free/paleo recipes, it is very easy to make and so forgiving. I’ve swapped the ingredients many times because I don’t always have everything in hand, and they always turned out great. It’s one of those recipes where you can get creative and know, it’s going to be delicious!

Ingredients
- Olive oil
- 1 cup smashed sweet potato
- 1 can tune (drained)
- 1 egg
- 1 tablespoon Dijon mustard
- 1 tablespoon mayo
- 1 tablespoon capers
- 1/2 teaspoon dry dill
- 1/2 teaspoon old bay seasoning
- 1/4 cup almond flour
- 1/4 cup chopped parsley or scallions
- salt and pepper to taste

- For the Avocado Ranch
- 1/2 avocado (1 if small)
- 1/3 to 1/2 cup of coconut milk
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 teaspoon dry dill
- fresh crushed pepper
Instructions
- Heat up a skillet on medium high heat. In a mixing bowl add all the ingredients except olive oil. Mix all the ingredients together and set apart.
- Add about 1/4 cup of olive oil to the pan and let it heat It up (don't let it smoke) using your hands form small patties (you should get about five patties, if using a 9" inch skillet, they should all fit in it) brown cook the patties until brown and flip over. To speed the process and make sure the patties are cooked through, I like to cover the skillet. It should only take about
- 3-5 minutes after flipping them once.
- To make the avocado ranch, blend the avocado, coconut milk, dill, onion powder, garlic powder, salt and pepper until smooth. Adding more milk until you get the desired consistency.
- Top the patties with the avocado ranch and eat immediately. Enjoy!
