This yellow Cauliflower is as pretty as it is delicious. It is seasoned with curry powder and garlic. It is the perfect healthy snack or side dish! The fresh tangy tzatziki sauce pairs perfectly with the warm flavor of the curry powder. Definetely a crowd pleaser!
I went to the store and saw this beautiful yellow cauliflower and immediately caught my eye but regular cauliflower would be just as delicious for this recipe. Garnish with fresh cilantro!

Roasted Yellow Cauliflower with Tzatziki Sauce.
Ingredients
- 1 Head yellow cauliflower
- 2 tablespoons olive oil
- 1 teaspoon curry powder
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- FOR THE TZATZIKI SAUCE
- 1/2 cup shredded cucumber
- 2 cups plain greek yogurt
- 1 1/2 tablespoon chopped fresh dill
- 1/4 cup finely chopped red onion
- salt and pepper to taste
Instructions
- Preheat oven to 400 Degrees.
- Cut the head of cauliflower in small florets and then cut the florets in half.
- Line a baking sheet with parchment paper and arrange the cauliflower.
- In a small bowl mix the olive oil, curry, and garlic powder.
- Brush the cauliflower with the oil mixture and season with salt and pepper. Bake for about 30min or until tender.
- For the tzatziki sauce, using a pepper towel squeeze the shredded cucumber to get rid of some of the moisture.
- In a bowl, mix the yogurt, cucumber, chopped dill, chopped onion, and mix until well combined.
- Season with salt and pepper to taste.
- Cover and chill until ready to serve.
