Ingredients
- 3 Green tomatoes
 - 1 cup almond flour
 - 1/4 cup freshly grated parmesan cheese
 - 1/2 teaspoon salt
 - 1/2 teaspoon Old bay seasoning
 - 2 eggs
 - 1 teaspoon deli mustard
 - –For the chipotle dressing–
 - 1/3 cup mayonnaise
 - 1/2 teaspoon old bay seasoning
 - 1/8 teaspoon garlic powder
 - 1 teaspoon chipotle paste
 - salt and pepper to taste
 
Instructions
- Preheat oven to 375 Degrees and line a baking sheet with aluminum foil.
 - Slice the tomatoes into a 1/4′ rounds and set aside.
 - on a shallow plate mix the almond flour, parmesan cheese, salt and old bay seasoning, and set aside.
 - In a bowl whisk the egg and the teaspoon of deli mustard and set aside.
 - Heat a heavy-bottomed skillet on medium-high heat and add enough oil to cover the bottom completely.
 - Dip the tomatoes in the egg mixture and dredge in the almond flour and parmesan cheese mixture.
 - Sear the tomatoes in the skillet, only about 2 minutes per side, just to give them a nice color.
 - Transfer the tomatoes to the baking sheet and bake for 10 minutes. Flip them over and continue baking for another 10 minutes.
 - For the chipotle sauce, add all the ingredient in a measuring cup and whisk until well combined.
 - After the tomatoes are done, let them rest for a couple of minutes before serving.
