Pancake Bites

Who doesn’t love pancakes for breakfast? They are highly requested at my home. My kids want breakfast as soon as they get out of be and the sooner the better! these mini pancakes bites are a life saver, they are so easy to make, so tiny and cute, so delicious and also fun to eat, but here’s my trick.. I always make them ahead of time. I store them in a zip top bag and keep them in my freezer, whenever we want an easy, delicious, yet homemade breakfast just grab a bunch of them, pop them in the microwave for a minute and they’re ready! as good as fresh. I’m not sure who first came with this idea but it is genius! I came across this recipe a couple of years ago on the Cooking Classy website, I have adapted it over time, I hope you enjoy my own version of it. I have added a few touches that makes them extra special.

Here’s how I make my Pancake Bites

Preheat your oven at 400 degrees and spray your mini muffin tin with cooking oil.  In a big bowl add the dry ingredients, flour, sugar, baking powder baking soda, cinnamon and salt. Mix well.
In a small bowl or measuring cup whisk the wet ingredients, milk, vinegar, egg, vanilla butter flavoring and melted butter.
Pour the wet ingredients into the dry ingredients and whisk until just combined. I’ll look lumpy. That’s ok.
It is recommended that you let any pancake batter rest for a couple of minutes. I have skipped this part many times and they turned out just fine so, it is up to you.
Fill each muffin well about 2/3 full.

For my first batch I have sprinkles, chocolate chip and blue berries.
for my second batch, I added cinnamon sugar to some of them.
Here’s after 10 minutes in the oven. They smell soooo good! Let them sit for a couple of minutes before you serve them.
Or place them on a cooling rack to completely cool before you freeze them. My first batch faced a couple little  challenges in the process.

Once completely cool, storage them in a zip to bag and keep them in your freezer for next time you need an easy and delicious homemade breakfast.
Or eat them immediately!
