This is my favorite way to make quick and easy “Charro Beans” without compromising flavor. This recipe has been approve by my friends are family members over the years. The secret is to find the perfect canned beans, to me the HEB beans are the cleanest and prettiest canned pinto beans I’ve had. They also have a very mild flavor, you cannot tell they came from a can so everybody is going to think it took hours to make them. If would not tell them our secret.
Every family has their own recipe, some add pork belly, chorizo, wieners, even potatoes but I prefer just some fatty bacon.
Just fry the bacon until slightly brown, remove excess of fat, add the pico de gallo and cook until tender. See, you could even buy pico de gallo at the store! don’t you love shortcuts?
I like to tie the bundle of cilantro with cooking twine for easy removal. I don’t like wilted cilantro but if you choose to leave it in is totally fine. I chop some fresh cilantro and add it just before serving. Super easy! You are going to impress with this recipe.

Easy Charro Beans
Ingredients
- 1 27oz can pinto beans (HEB beans are my favorite)
- 3 strips of bacon
- 2 small Roma tomatoes, diced
- 1/2 small onion, chopped
- 1 big jalapeño pepper, seeded and chopped
- 1 garlic clove
- 1 bunch fresh cilantro
- salt and pepper to taste
Instructions
- Cut the bacon into strips and brown it in a medium sauce pan. Don’t get it crisp just cook it through.
- While the bacon is cooking, dice the tomatoes and chopped the onions and jalapeño pepper. If you don’t want the beans to be spicy remove the veins and seeds.
- Drain most of the bacon fat and add the tomato, onions and peppers. Cook until soft.
- Add the beans and 1 cup of water.
- Add the bunch of cilantro. I like to tie it with kitchen twine for easy removal.
- Season with salt and pepper. Cover and let it cook for 30 minutes.
- Adjust seasoning if needed and remove the cilantro bundle.
- Chop some fresh cilantro and garnish before serving.
- Enjoy!
