Chili season is finally here! It actually feels a little like fall here in Texas. Anything below 80 degrees feels like fall, period.
I didn’t have the pleasure of meeting Chili until I was in my twenties and I have to confess, I wasn’t hook at first. Maybe because the first time I had chili was out of can? That was a wrong move I know, but I learned from it and moved on. I am sure you agree, there’s nothing like homemade chili. Rich, bold and so comforting.
I always make beef chili, its just perfectly delicious but today, I didn’t have any ground beef and really wanted chili so.. I gave ground pork a try. So delicious! This is definitely the best chili I have ever made and there’s no turning back.

Ingredients
- 1 teaspoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1lb ground pork
- 1 teaspoon cumin
- 1/2 teaspoon ancho powder
- 1 teaspoon chili powder
- 1 can pinto beans
- 1 can kidney beans
- 1 can tomato sauce
- 1/2 tablespoon vinegar
Instructions
- On medium high heat, cook the onions and garlic until tender and translucent.
- Add the ground pork and cook until brown about 8 minutes.
- Add the spices and stir until all the meat is covered with the spices.
- Add the beans and tomato sauce. Cover and cook for about 30 minute.
- Check seasoning and adjust if needed.
- Add a splash of vinegar and cook for another 5 minutes.
