Let me tell you a little story. When I was pregnant with my oldest daughter I had only one craving: Peaches. I could not get enough! Lucky for me, I found a little stand run by a sweet old man on my way home from Church. He had the best Peaches! So, every Sunday I would stop by and get me a few pounds of peaches, enough to hold me until the next Sunday. My daughter was an early Fall baby so, I had the best summer filling my cravings with delicious peaches. I was so devastated when the old man didn’t show up anymore.
Those delicious, sweet, juicy, peaches were Fredericksburg peaches. Fredericksburg, Tx. Is such a beautiful, lovely town. Go visit if you can.
I was so excited when I saw Fredericksburg peaches at my local HEB I could not resist. I got me a few pounds and I was on a mission to create delicious recipes, but… I had almost eaten them all before I even started. What can I say? brought back some sweet memories.
I did have enough peaches to make this delicious salad. It was a total hit! This is why..

What makes this salad great (besides the peaches) is the vinaigrette. It is my favorite, I make it all the time and I don’t even bother in buying store-bought dressings anymore, this is my go-to dressing. Only a few ingredients and so easy to make.
For this Salad I used a bag of organic baby greens, two peaches (sliced and grilled) crumbled goat cheese, thinly sliced red onion, and toasted sliver almonds. I like to make the dressing in the same bowl I mix the greens. After the dressing is ready I pilled
I’ve made this salad with strawberries and blueberries, used pecans, walnuts, spinach. It’s always delicious, if you have good ingredients you’ll have good results.

Ingredients
- 1 teaspoon Dijon mustard
- 1 teaspoon Balsamic Vinegar
- 1 teaspoon honey
- 1/4 cup olive oil
- salt and pepper to taste
Instructions
- In a small bowl add the mustard, balsamic vinegar and honey. Whisk. Slowly drizzle the olive oil and whisking constantly until the ingredients are emulsified. Season with salt and pepper.
