Is there a food you didn’t like eating growing up and now you can’t get enough of? For me, one of those foods is canned tuna. I used to get so irritated when my mom would say we were eating tuna salad for lunch! It’s crazy how your palate changes so much with age. Now I love canned tuna, and I’m always finding new delicious ways to make it.
Like in this Salad! All green foods, all delicious. Avocado, green bell pepper, cilantro, and green chiles, mixed with a little mayo and served over a bed of spinach. Simple, yet so delicious!
Ingredients
- 1 can tuna (drained)
- 1 small bell pepper, diced
- 2 tablespoon green chiles (canned)
- 1/3 chopped fresh cilantro
- 1/2 avocado 1 if small
- 1 tbsp mayonnaise
Instructions
- In a bowl smash the avocado and mix with a tablespoon of mayonnaise. Add the rest of the ingredients and mix until well combined. Season with salt and pepper. Add more mayonnaise for a creamier salad
