My daughter just turned 15, and in Mexican culture, turning 15 is such a special milestone. A quinceañera is more than just a birthday—it’s that beautiful moment when your little girl is no longer quite a little girl, but a young lady. And as a mom, I have to admit, that part is a little bittersweet. How did we get here so fast?

For her birthday, she asked for something very simple: an old-fashioned chocolate cake. I had a recipe I had used before, but of course, when I went looking for it, I couldn’t find it anywhere! So I did what I usually do when I’m missing a recipe—I went searching for a new one.

That’s how I found this recipe from Sally’s Baking Addiction, and I’m actually so glad I couldn’t find my old recipe because this cake was absolutely perfect. Rich, chocolatey, moist, and just the kind of classic chocolate cake I was hoping for.

My daughter loved it, and honestly, so did I. Sometimes the recipes we stumble upon by accident become the ones we keep coming back to. I have a feeling this is going to be my new go-to chocolate cake from now on.

And while I’m still trying to wrap my head around the fact that my little girl is 15, I’m grateful I got to celebrate this special milestone with her—and with a big slice of chocolate cake. ❤️

What you need to make The best Chocolate Layer Cake

All-purpose flour – Nothing fancy, just regular flour.

Unsweetened cocoa powder – For all that chocolatey goodness.

Granulated sugar – The sweet stuff!

Baking soda – Helps the cake rise.

Baking powder – A little extra lift for the cake.

Espresso powder (optional) – Totally optional, but it makes the chocolate flavor even better.

Vegetable oil – Keeps the cake nice and moist.

Eggs, room temperature – Room-temperature eggs work best here.

Vanilla extract – A little vanilla makes everything better.

Buttermilk – Adds moisture and a little tang.

Hot coffee or water – I used coffee, but water works too.

Unsalted butter – For that rich, buttery frosting.

Confectioners’ sugar – Makes the frosting sweet and smooth.

Heavy cream – Makes the frosting extra creamy.

Colorful sprinkles, optional – Because it’s a birthday cake! 🎉

Tips & Tricks

  • Use room-temperature eggs. They mix into the batter much more easily.
  • Don’t skip the hot coffee. It really brings out the chocolate flavor. And don’t worry—the cake won’t taste like coffee.
  • The batter will be very thin. Don’t panic! That’s exactly how it should be.
  • Let the cakes cool completely. I know it’s tempting to start frosting right away, but warm cake and frosting are not a good combination.
  • Don’t worry about perfect layers. A little frosting can hide all the imperfections. 😉
  • Make it your own. This was my daughter’s birthday cake, so I added pink sprinkles because is her favorite color. You can keep it simple or decorate it however you like.
  • Make it ahead. You can bake the cake layers a day ahead and frost them when you’re ready. Just wrap the cooled layers well and keep them at room temperature.
  • Keep an eye on the baking time. Every oven is a little different, so start checking the cake a few minutes before the recommended time.
