This pulled pork is one of my most popular recipes between my family and friends. It is my go-to meal when I have company because I can make it ahead of time, it is super easy, and everybody loves it.
I found the original recipe about 14 years ago, back when food blogs were not very popular. I really have no idea where it first came from. I have modified the recipe over the years to adjust it to my taste and needs and I have to say, this is by far my favorite version.

Onion
Fresh garlic cloves
Chipotle peppers in adobo sauce. Use 2 if you want a little heat.
Tomato sauce
Dijon mustard
Smoked paprika
Ketchup
White vinegar
Worcestershire sauce
Light brown sugar
BBQ sauce (optional)
Bay leaf
Salt
Cooking oil
Pork butt shoulder roast. Pork tenderloin would also work for this recipe.

Crock Pot. I have made this pulled pork in the crock pot many times and it always comes out perfect. The Dutch oven is my favorite method but if you want to make this in the morning and have it ready at dinner time just add the chunks of pork to the cruck pot, cover with the sauce and cook on low, undisturbed for 6-8 hours.
Oven. Brown the pork, pour over the sauce and bring to a simmer. Cover and transfer to a 350 degrees preheated oven and cook for 1 1/2 to 2 hrs or until de meat is very tender.

Nachos: Arrange a layer of corn tortillas on a baking dish and add refried beans, pulled pork and shredded cheese. Bake at 375 degrees until the cheese is melted and everything is nice and hot. about 8-10 minutes. Add your favorite toppings and serve warm.
Tacos: I love to make these with soft flour tortillas, crunchy coleslaw and tangy tomatillo salsa.
Quesadillas: Pulled pork and melty cheese, do I need to say more?
Baked potatoes: Stuff the bake potatoes with a good serving of pulled pork and serve with a big dollop of sour cream, green onions and pickle jalapeños. Delicious!
Ingredients
- 1 large onion, chopped
- 6 garlic cloves, peeled
- 1 to 2 chipotle peppers in adobo sauce, seeded
- 1/4 cup tomato sauce
- 2 Tbsp Dijon mustard
- 1 teaspoon paprika
- 1/3 cup ketchup
- 1/2 cup white vinegar
- 2 teaspoons Worcestershire sauce
- 1/4 cup light brown sugar
- 1/4 cup bbq sauce (optional)
- 1 bay leaf
- Salt
- 1 tablespoon oil
- 3 lbs of pork butt shoulder roast, trimmed of excess fat and cut into chunks

Instructions
- In a blender, purée all of the sauce ingredients: onions, garlic, chipotle peppers, tomato sauce, dijon mustard, paprika, ketchup, vinegar, worcestershire sauce, brown sugar and bbq sauce. Set aside.
- Add the oil into a large Dutch oven and turn the heat to medium high.
- Once the oil is hot, add the pork and sear it on all sides until golden brown. Work in batches. Don’t over crowd.
- Add the sauce to the Pot and return the rest of the pork.
- Lower the heat to a gentle simmer and cover.
- Cook for about 1 hour or until the pork is fork tender.
- Once the pork is done transfer to a large plate.
- Reduce the remaining sauce on medium heat.
- While the sauce is reducing, shred the pork using two forks.
- Return the meat to the sauce and stir.
- Serve hot on hamburger buns.
