This salad is one of my favorite things to always have in the fridge. Not only is work great with so many things but it also tastes better the next day (even when I rarely have leftovers.
What you need to make this Easy Chopped Salad
Cucumbers. Small seedless cucumbers work great because the skin is much tender, and you don’t have to scoop the seeds out.
Roma tomatoes, Ripe but still a little firm
Red onion
Fresh parsley
Fresh mint
Lime juice. You can also do lemon juice or a combination of both

There’s really no tips or tricks to this recipe because it is that simple to make. What I can do is give you some ideas on how to eat it.
This salad it’s great on top of grilled chicken, hummus, mixed with cold elbow past for a barbecue side dish. You can sub cilantro for mint and add chopped jalapeno and avocado to make a delicious salsa.
I mixed in quinoa and avocado for a quick lunch, and it was perfect!
Easy Chopped Salad
Ingredients
- 4 small seedless cucumbers, chopped
- 2 ripe Roma tomato, chopped
- 1/2 small red onion, chopped
- 1/4 cup chopped parsley
- 1 tbsp fresh, chopped mint
- juice 1 lime (2 tbsp)
- 4 tablespoons olive oil
- salt and pepper to taste
Instructions
- In a large bowl add the chopped cucumber, tomato, onions, parsley and mint.
- In a small jar or sealed container add the lime juice, olive oil and shake until well mixed. Season with salt and paper to taste and shake again.
- Pour dressing over chopped veggies and mix.
- Chill in the refrigerator until ready to serve.
