Who doesn’t love pancakes for breakfast? They are highly requested at my home. My kids want breakfast as soon as they get out of be and the sooner the better! these mini pancakes bites are a life saver, they are so easy to make, so tiny and cute, so delicious and also fun to eat, but here’s my trick.. I always make them ahead of time. I store them in a zip top bag and keep them in my freezer, whenever we want an easy, delicious, yet homemade breakfast just grab a bunch of them, pop them in the microwave for a minute and they’re ready! as good as fresh. I’m not sure who first came with this idea but it is genius! I came across this recipe a couple of years ago on the Cooking Classy website, I have adapted it over time, I hope you enjoy my own version of it. I have added a few touches that makes them extra special.
Here’s how I make my Pancake Bites
Ingredients
- 2 cups of flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups of whole milk
- 1 1/2 tablespoons white vinegar
- 1/2 teaspoon vanilla butter flavor
- 2 large eggs
- 3 tablespoon melted butter
- Topping of choice, blueberries, chocolate chips, strawberries.
Instructions
- Preheat your oven to 400 degrees. Spray two mini muffin tins with cooking spray.
- In a big bowl whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt.
- In a smaller bowl whisk the milk, vinegar, vanilla butter flavoring, eggs and melted butter.
- Pour milk mixture into flour mixture and whisk until just combined, the batter will be lumpy.
- Fill each muffin about 2/3 full.
- Add your toppings (optional)
- Bake for 10 minutes or until the are firm in the center. You can insert a tooth pick to test them.
