Cole Slaw with Chipotle dressing

Here is a super easy, delicious, fun, spicy coleslaw. This is a great option for when you want to give a little extra flavor to your food. It goes great with fish tacos, pulled pork sandwiches, hot dog, even hamburgers! It will make them taste special and a little out of the ordinary. As I said, it is very easy to make and only takes few steps. Let’s jump right in! 

I have about 4-5 cups of coleslaw mix in a big mixing bowl. I don’t normally use coleslaw out of a bag  but I have this bag left in my fridge from my birthday party so that’s what I used. I did run the knife through it to  make it smaller. 

I thinly sliced red and yellow bell pepper (any color would do), combined its about a cup. And I aslo chopped fresh cilantro, about 1/2 cup.  

Add the peppers and cilantro to the rest of the of the veggies. Mix, and set aside. 

In a measuring cup, combine 1/2 cup mayonnaise, 1/8 cup milk, 1 teaspoon of vinegar and 2 teaspoons of the chipotle in adobo sauce, season with salt and pepper. You can chop the peppers and add them to the dressing if you like it extra spicy, for me, the sauce is good enough.  Whisk everything together and taste to adjust seasoning  

Pour the dressing on the coleslaw and mix until everything is well combined. And you’re done! 

This is definitely not your typical coleslaw, the bell peppers add a crisp bite to the coleslaw, the dressing is smoky, creamy and a little spicy, and the cilantro makes everything so fresh, it is the perfect combination!
