Oh, meatloaf! This dish and I have some history. The first memories I have of this dish are from back home, in Monterrey. My mom made it maybe once, twice? yeah, that’s all! So, even when I have always loved meatloaf, I never really had a chance to cook it, it took me a long time to get it right, I tried so many different ingredients, combined different recipes until I finally get it the way I like it. Let me rephrase that, the way my husband likes it. He is the toughest critic. They make it a little different here in Texas, while my mom’s meatloaf (pastel de carne) is packed with veggies like potatoes, bell pepper, carrots, and onions, here is more simple… but equally delicious. Probably the thing I enjoyed the most about my mom’s meatloaf is that is wrapped in bacon, that’s the way I always make mine and everybody loves it! Even my 3-year-old girl. That says a lot.

Preheat your oven to 350 degrees. Start by adding a 1/4 cup of oatmeal to a food processor and pulse It until is finely ground. Transfer to a bowl. 

In the same food processor add half onion. I roughly chopped it, just to help the food processor a little bit.

Aftet the onion is finely chopped add 2 roasted peppers and pulse a few times until the mixture it looks almost like a chunky salsa.

Now, in a big bowl add the ground beef, egg, milk, oatmeal, onions, and peppers. Season with black pepper and 1/2 teaspoon of salt.
Mix it all together. Clean hands are cook’s best tools.  

shape it into a loaf and cover it with strips of bacon. Tuck the ends o f the bacon under the meatloaf. 

In a small, tiny bowl mix together the ketchup, brown sugar, Dijon mustard and Worchester sauce.
Spread it all over the meatloaf. Cook for about 50-60 minutes.
This is after one hour. Let it rest for 5-10 minutes, and carefully transfer to a serving platter. 
This is a small meatloaf. It is perfect for my family of four. You can always double the quantities. Some of my favorite side dishes for meatloaf are mashed potatoes, mac and cheese and roasted veggies. Hope you give this meatloaf a try!
